Vegetarian Cooking: Vegetable Fajitas

Seems all I’m doing recently is starting series’ on my blog, and here’s another one: super easy vegetarian cookery that you can show off to your boyfriend, girlfriend, mum, dad, dog… Anybody, basically.

Being a vegetarian, I find it infuriating when people ask me “So what do you actually eat?” What does it look like I eat?! Air?! With so many alternatives to meat available, I’ll be showing you some easy ways to vegetarian-ise your favourite dishes.

I absolutely love these quick and easy veggie fajitas – they literally take about ten minutes. Let’s go!

Start with a giant frying pan or wok. Put a little bit of oil in: not too much or the veggies will be all greasy (and that doesn’t really scream “health”, does it?).

Now choose your veggies. I had a look in the fridge and just used what I found – that’s the beauty of these fajitas; you can use whatever you already have lying about. I diced a courgette, chopped up some mushrooms and yellow, orange and red peppers. Looking nice and colourful in the pan now. Doesn’t brightly coloured food make you happy?

If you want to be fancy (like me), splash a bit of lime juice into the pan to coat the vegetables. I also added a bit of garlic salt for more flavour.

For a bit of protein, I added some Quorn fajita strips (having never eaten meat in my life, I don’t know if they taste of real meat, but they’re flipping delicious either way) at the last minute as they only need a minute and a half to cook.

Heat up your pre-made fajita wraps (I found mine in the bargain bin at Morrisons for 80p) in the microwave, grate some cheese (which is optional – but I LOVE cheese), and you’re done!

I love to spread a bit of mayonnaise onto the wrap to hold everything together, but you could use sour cream instead if you’re feeling a bit Mexican.
